The idea behind it was to fuse regional cuisines by combining classic dishes typical of a particular region with unusual ingredients from other regions. This type of cooking is also known as crossover. Fusion cuisine has since evolved, incorporating culinary cultures from around the world and becoming a major trend on the gastronomic scene.

This blend of flavors makes the currywurst a classic of fusion cuisine. Another long-established example is Tex-Mex cuisine, which combines Mexican dishes with Texas influences, such as Mexican tortillas with Texas BBQ meat. Modern examples of fusion food include:

  • Tapas with international influences: Many tapas restaurants fuse traditional Spanish nibbles with international flavors. Thus, tapas with Indian or Asian influences can be found, offering an exciting combination of different cuisines.
  • Mussels in coconut milk with Thai spices: European seafood is combined with the exotic flavors of Thai cuisine to create a unique taste experience.
  • Sushi burritos: A blend of Japanese sushi tradition and Mexican cuisine, where the ingredients of a sushi roll are wrapped in a large tortilla.
