Active recirculation systems are cost-effective all-rounders for keeping food warm, cooling, regeneration or final cooking. Food can be actively heated and cooled in complete isolation from one another. This is because the climate control partition of the the special trays are divided into hot and cold trays are divided into hot and cold zones. The extreme storage capacity of our Schönwald system porcelain for hot and cold temperatures supports this technique perfectly. Thus hygienic regulations - at least 65 °C for hot food and a maximum of 7 °C for cold food-can be reliably met.
